This shot requires a fine grind to handle the 30 seconds pre infusion aiming at 1.5 - 1.8ml/s, this stage has a 5gr limit in case your shot is going too fast the. It will move on to the extraction phase and still get to a flat bar profile. The extraction stage is a simple 6bar aiming to double the pre brew stage time for a total brew time of about 55 seconds to a minute. This profile includes variables to tweak, mainly the final brew stage, which if you like, can be turned into a 9bar traditional shot.
